The use of egg by-products for flour production is an interesting practice that can
contribute to reducing food waste and adding value to egg waste. Flour produced from
egg by-products can be used in both the food industry and homemade recipes. Eggshells
are rich in calcium, making them an excellent source of this mineral. Considering the
importance of utilizing this waste to reduce eggshell deposition and increase the
nutritional value of food formulations, this study aimed to obtain eggshell flour for the
production of muffin-type cakes with partial substitution of wheat flour with eggshell
flour. Muffin-type cakes are an excellent popular option for incorporating innovative
ingredients as they can be found in bakeries, cafes, and supermarkets. This study
addressed the process of obtaining the flour and the muffin cake; market research was
conducted to evaluate the purchase intention if the cake were available in the market. A
simplified layout of the industry was created, along with mass and energy balances, the
development of the nutritional information table for the product. An economic analysis
was also conducted, considering equipment, energy costs, labor, and raw materials, to
assess the financial feasibility. Based on all these data, it was possible to estimate the final
value of a 300 g cake package, which was R$5.25, generating a profit of 60% per unit.
This selling price was estimated according to a survey of prices of similar products
available in the market. Therefore, eggshell flour can be considered a promising strategy
for making cakes as it fully utilizes and promotes sustainability in cooking. |

A utilização de subprodutos do ovo para a produção de farinha é uma prática interessante que pode contribuir para reduzir o desperdício alimentar e agregar valor aos resíduos de ovos. A farinha produzida a partir de subproduto do ovo pode ser usada tanto na indústria alimentícia, quanto em receitas caseiras. A casca de ovo é rica em cálcio, o que torna uma excelente fonte desse mineral. Diante da importância do aproveitamento desse resíduo visando à diminuição da deposição dessas cascas de ovos, e aumento do valor nutricional de formulações alimentícias, este trabalho teve como objetivo obter farinha do resíduo da casca de ovo para produção de bolo tipo muffin com substituição parcial da farinha de trigo por farinha da casca de ovo. O bolo tipo muffin é uma excelente opção popular para inclusão de ingredientes inovadores pois pode ser encontrado em padarias, lanchonetes e supermercados. O presente trabalho abordou o processo de obtenção da farinha e do bolo muffin; foi realizado uma pesquisa de mercado com o intuito de avaliar a intenção de compra do bolo caso estivesse disponível no mercado. Foi feito um layout simplificado da indústria, os balanços de massa e energia, elaboração da tabela de informação nutricional do produto; também foi feito uma análise econômica abordando equipamentos, custo energético, mão de obra e matérias-primas para análise da viabilidade financeira. A partir de todos esses dados foi possível estimar o valor final da embalagem de 300 g do bolo que foi de R$5,25, gerando um lucro de 60% sobre cada unidade. Esse valor de venda foi estimado de acordo com um levantamento de preços de produtos semelhantes existentes no mercado.
