Resumo: | The action of making tourism sometimes has the power to bring visitors and guests together through a dish placed on the table, or simply delivered by street vendors. The gastronomic culture that is passed on from generation to generation carries with it historical and cultural marks that speak volumes about the reality of a people. From this reflection, this research seeks to analyze the gastronomic identity of Rio Grande do Norte based on the perception of tourists through comments on the TripAdvisor website, in which 8 restaurants in Natal - RN were analyzed and a total of 169 comments were collected. The work is directed by a netnographic research of exploratory and descriptive character, being also performed a content analysis with the help of the Iramuteq software for reading and compiling the collected data. The results obtained led to the understanding and identification of some characteristic elements of the state - such as shrimp, rice, carne de sol and coalho cheese -; the low capture of perceptual expression about the dishes that represent the state according to tourists; and the pointing of criticism and improvements for the more effective promotion of the gastronomic identity / cuisine of Potiguar. It was identified, therefore, that there is not yet a characteristic identity of RN regarding its gastronomy in the view of tourists who left their comments on TripAdvisor, especially after the perception that at no time was Ginga with Tapioca (dish recognized as intangible heritage of RN) mentioned. |
