Resumo:The food industry needs to develop new products with high-cost benefits by exploring segments in which raw materials are less valued. Fishing is one of the resources. of Brazil that contributed to its economy. In the municipality of Caiçara do Norte, state of Rio Grande do Norte, the flying fish is abundant and stands out as an economic and social opportunity. The objective of this study was made for the flying fish as raw material in the form of a fishball with minced meat and its roe as a filler. For this, flowcharts, description of processes, production and equipment mass balances, layout design of an industrial unit, visual identity, and costs to evaluate the economic viability of the product were elaborated. This study showed that the production of fishball is technically feasible, since the raw material, inputs, and available technology allow obtaining the product with the desired characteristics and in compliance with health regulations. 40% separated mechanized meat and 14% flying fish roe. The final yield of the fishball was calculated at 94% from the whole fish. The industrial unit was designed with a total area of 280 m², and a monthly production capacity of 2,000 kg of raw material, 777.6 kg of CMS, and 1,883.6 kg of fishballs. The estimated production cost for the production of the fishball, considering the projected conditions was R$ 25.15 per kg (R$ 1.00 per kg). Complementary studies must be carried out to respect its economic viability. A concrete initiative can provide a significant improvement in economic development in the municipality of Caiçara do Norte, RN, valuing the artisanal fishing activity and transforming, in a sustainable way, both economically and culturally, valuing this marine species, exploring in a margin of marine safety, the productive capacity in the harvest period, as well as correctly allocating the generated ones.
