Resumo:This work presents the development of the carbonated probiotic dairy beverage with lemon flavor, which aims to arouse the curiosity of consumers due to properties of probiotics beneficial to health. Initially, the work describes a theoretical reference on processes and equipments needed to process the proposal dairy beverage. Subsequently, the proposal of the process is carried out for a daily batch of 500 kg, considering the information pertinent to legislations, layout of shop floor, mass and energy balances, besides the cost estimation. The carbonated probiotic dairy beverage will the available in thermoplastic packages with 500 mL. The cost and retail price analyses verify the product commercial feasibility, using as comparison similar products available in the market. Product trade name and label with nutritional information and relevant data to the consumer, in accordance with current legislation, were also defined. Another important point to be highlighted is the approach to recovery the process residues. Thus, for the effluents treatment from the plant, it was decided to implement the activated sludge method and biological reactors.
