Resumo: | The objective of this work was to carry out the evaluation of the physical-chemical and chemical parameters of the quinoa oil (Chenopodium quinoa Willd) obtained by biotechnology. The oil was supplied by the company Plantus S / A. The tests carried out were: fatty acid profile using a Gas Chromatograph Coupled to Masses, acidity index, peroxide, iodine and saponification. The determination of minerals was carried out using the technique of optical emission spectrometry with plasma. The concentration of alpha and gamma-tocopherol was determined by High Performance liquid chromatography (HPLC). Fatty acids majorities were linoleic and palmitic acids (57.19% and 23.87%, respectively). The acidity and peroxide indices were: 1.6 mg KOH.g-1 and 1.7 meq. Kg-1, respectively. The presence of polyunsaturated fatty acids demonstrates its beneficial potential for human health. The results for the concentrations of alpha and gamma-tocopherol were 5.6 and 7.3 mg. mL-1, respectively. In the analysis of minerals, calcium (19.8 mg. G -1) showed a higher concentration. The analyzes carried out indicated that the biotechnological extraction process did not change the quality of the oil, and that the oil has the potential to be used in food. |
