Resumo:Milk is one of the most consumed products in the world. In Brazil, the commercialization of raw milk has been banned by legislation since 1969. Thus, the objective of the present study was to evaluate the quality of raw cow's milk produced and marketed in the municipality of Santa Cruz-RN. 16 samples of raw cow's milk collected from May to July / 2018 in the city of Santa Cruz-RN were analyzed. Physical-chemical, microbiological and fraud analyzes were performed. The results were compared to the current National Normative Instructions. It was verified for the parameters of fat, protein and lactose contents, that 31.3% (n = 5) had values below the established. As for the total solids content, a total of 6 samples (37.5%) were inadequate. For defatted dry extract, 43.8% (n = 7) of the samples showed a lower value than recommended and a total of 68.8% (n = 11) samples are at a pH above the established standards. Regarding the microbiological analysis, 68.8% (n = 11) of the samples were unfit for consumption. Regarding the counting of somatic cells, it was identified that 43.75% (n = 7) presented larger quantities than allowed for commercialization. Qualitative analysis to identify milk fraud detected antibiotic residue in 12.5% (n = 2) of the collected samples. After checking the quality of raw milk produced and sold in Santa Cruz-RN, only two samples were in perfect agreement with the legislation. Thus, it is evident the need for regular training of small rural producers in order to guarantee the hygienic-sanitary quality of the product sold.
