For this purpose, semi-structured interviews were conducted with local culinarians, and the interview data were analyzed and identified to the most cited preparations. From the analysis of content, it was verified that the main preparations sold during the festival of Sant'Anna were: chicken cream, hot dogs and sweet pies, foods not identified as regional. Despite this, meat dishes were identified as being the most representative of the local cuisine and the buchada as typical of the region, being the regional dish with the highest demand for diners. One can observe the influence of the food globalization, however, regional preparations are still found within the local festivities, keeping the regional cuisine alive. Este artigo buscou identificar e compreender quais as preparações culinárias vendidas durante a festa de Sant’Anna como elemento histórico-cultural na festa da padroeira de Currais Novos. Para isso foram realizadas entrevistas semiestruturadas com culinaristas locais, sendo os dados das entrevistas analisados e identificadas as preparações mais citadas. A partir das análises de conteúdo, constatou-se que as principais preparações vendidas durante a festividade de Sant’Anna foram: creme de galinha, cachorro quente e tortas doces, comidas não identificadas como regionais. Apesar disso, foi identificado pratos à base de carne sol como sendo o mais representativo da culinária local e a buchada como típica da região, sendo o prato regional com maior procura pelos comensais.
