The methodology used in the research was qualitative, being an action research in the meat processing unit of the city of São Vicente-RN. As results, the study revealed that the slaughterhouse is a complex system that involves many inspection agencies, in which most of the times do not exercise due, it was observed that the municipality provide an expensive service for a small portion in particular, which could cost all operational costs Finally, the study concludes that the production process in the Municipal Slaughterhouse is a process that presents the minimum of requirements of the legislation in force, since it requires the competent authorities, the careful perception of all conditions inherent in the process. El presente estudio tiene como objetivo analizar el proceso de producción en un Matadero Municipal. La metodología utilizada en la investigación fue cualitativa, siendo una investigación-acción en la unidad de procesamiento de carne de la ciudad de São Vicente-RN. Como resultados, el estudio reveló que el matadero es un sistema complejo que involucra a muchas agencias de inspección, en el cual la mayoría de las veces no ejercen su debido, se observó que el municipio brinda un servicio costoso para una pequeña porción en particular, lo que podría costar todos los costos operativos Finalmente, el estudio concluye que el proceso de producción en el Matadero Municipal es un proceso que presenta el mínimo de requisitos de la legislación vigente, ya que requiere de las autoridades competentes, la percepción cuidadosa de todas las condiciones inherentes al proceso. O presente estudo tem como objetivo analisar o processo de produção em um Matadouro Municipal. A metodologia utilizada na pesquisa foi qualitativa, tratando-se de uma pesquisa-ação na unidade de processamento de carnes do município de São Vicente-RN. Como resultados, o estudo revelou que o abatedouro é um sistema complexo que envolve diversos órgãos fiscalizadores, nos quais na maioria das vezes não exercem os devidos, observou-se que o município presta um serviço caro para uma parcela pequena em particular, que poderia custar todos os custos operacionais Por fim, o estudo conclui que o processo produtivo no Frigorífico Municipal é um processo que apresenta os requisitos mínimos da legislação em vigor, uma vez que exige das autoridades competentes, a percepção atenta de todas as condições inerentes ao processo.
