Resumo:Sobá is a dish, usually consumed individually, consisting of pork broth, omelet sliced ??thin strips, beef or pork, chives, ginger and a pasta noodles prepared with vegetable ashes. This article seeks to analyze the sobá as experience, memory and imaginary. The focus is on the sobá produced and consumed in the Central and Tourist Fair of Campo Grande (MS) - a space located in the center of the city and where the experience of its tasting, while something "tourist", makes sense through an imaginary also expressed in the landscape of the place and anchored in a memory about the Japanese immigration in the south of the former state of Mato Grosso.
