Diet quality plays a fundamental role in promoting health and preventing disease. A
healthy diet is associated with benefits such as reduced risk of chronic diseases, and
considers different cultural and lifestyle contexts, individual needs, and physical and
mental health conditions. Upon entering university, the undergraduates starting their
adult lives face several transformations that affect their lifestyle. As a result, the
stress associated with this period can influence the adoption of lifestyle habits that
are not always appropriate, where one of the most significant changes occurs in the
quality of food. Still, during the COVID-19 pandemic period and changes in students'
lifestyles with the transition to remote learning and social distancing, may have
caused changes in students' eating habits. Thus, assessing diet quality represents an
important strategy to obtain information that can support the formulation of public
health policies, especially in a health emergency context, as it enables the analysis of
the different elements that make up individuals' dietary patterns. Therefore, this study
aimed to evaluate the association between the quality of the diet of undergraduates
from public institutions with sociodemographic characteristics, self-reported changes
in weight, food insecurity, sleep duration and perceived stress in the context of the
COVID-19 pandemic. A descriptive, observational and cross-sectional study was
carried out, with data found between August 2020 and February 2021, through an
online form, with undergraduate students from five Brazilian public universities,
covering the five regions of Brazil. The questionnaire included socioeconomic
variables (including race, family income and change in income during the pandemic)
and validated tools (Diet Quality Scale, Brazilian Food Insecurity Scale, Perceived
Stress Scale) and sleep duration, totaling 108 questions. For data analysis, the Chisquare test or the Kruskal-Wallis test was performed, and after that a logistic
regression was performed to measure the association between the variables. 4,732
students participated in the research, with a median age of 22 years old, 66.1% of
whom were female; 37.8% of students had some degree of food insecurity, and
74.3% had a high perception of stress. Regarding diet quality, 51.9% of students had
good diet quality, however 8.6% and 1.3% of students had poor or very poor diet
quality, respectively. Finally, it was possible to notice an association between poor or
very poor diet quality and weight gain during the pandemic AOR = 1.56 (95% CI =
1.12 – 2.20) and moderate and high perceived stress AOR = 2.85 (95% CI = 1.71 –
4.74) of undergraduates. The study was published in the article published in the
journal “Frontiers in Nutrition” entitled “Diet Quality and Associated Factors in
Brazilian Graduates During the COVID-19 Pandemic”. |

A qualidade da dieta desempenha um papel fundamental na promoção da saúde e na prevenção de doenças. Uma alimentação saudável está associada a benefícios como a redução do risco de doenças crônicas, e leva em consideração os diferentes contextos culturais e de estilo de vida, necessidades individuais, e condições de saúde física e mental. Ao entrarem na universidade, os universitários iniciando a vida adulta enfrentam diversas transformações que afetam seu estilo de vida. Com isso, o estresse associado a esse período pode influenciar na adoção de hábitos de vida nem sempre adequados, onde uma das mudanças mais significativas ocorre na qualidade da alimentação. Ainda, durante o período pandêmico da COVID-19 e as alterações no estilo de vida dos estudantes com a transição para o ensino remoto e o distanciamento social, podem ter causado alterações nos hábitos alimentares dos estudantes. Assim, avaliar a qualidade da dieta representa uma estratégia importante para obter informações que podem embasar a formulação de políticas de saúde pública, especialmente em um contexto de emergência em saúde, uma vez que possibilita a análise dos diversos elementos que compõem os padrões alimentares dos indivíduos. Dessa forma, este estudo teve como objetivo avaliar a associação entre a qualidade da dieta dos estudantes universitários de instituições públicas com as características sociodemográficas, mudanças autorreferidas no peso, insegurança alimentar, duração do sono e estresse percebido no contexto da pandemia de COVID-19. Foi realizado um estudo descritivo, observacional e transversal, com dados coletados entre agosto de 2020 e fevereiro de 2021, através de um formulário online, com alunos de graduação de cinco universidades públicas brasileiras, englobando as cinco regiões do Brasil. O questionário incluiu variáveis socioeconômicas (incluindo raça, renda familiar e mudança de renda durante a pandemia) e ferramentas validadas (Escala de Qualidade da Dieta, Escala Brasileira de Insegurança Alimentar, Escala de Estresse Percebido) e a duração do sono, totalizando 108 questões. Para a análise de dados foi realizada o teste do Quiquadrado ou o teste de Kruskal-Wallis, e após isso foi realizada uma regressão logística, para medir a associação entre as variáveis. Participaram da pesquisa 4732 estudantes, com idade mediana de 22 anos, sendo 66,1% do sexo feminino; 37,8% dos estudantes se enquadravam em algum grau de insegurança alimentar, e 74,3% apresentavam uma percepção do estresse elevado. Quanto a qualidade da dieta, 51,9% dos estudantes tinham uma boa qualidade da dieta, contudo 8,6% e 1,3% dos estudantes apresentavam uma qualidade da dieta ruim ou muito ruim, respectivamente. Por fim, foi possível perceber uma associação da qualidade da dieta ruim ou muito ruim com o aumento de peso durante a pandemia AOR = 1,56 (95% CI = 1,12 – 2,20) e o estresse percebido moderado e elevado AOR = 2,85 (95% CI = 1,71 – 4,74) dos universitários.
