Considering that it is still unknown if these multichromatic displays are markers of nutrient availability to seed dispersers, the aim of this work is to verify if changes in water content, dry weight, soluble sugars, starch, soluble proteins, free amino acids, and soluble phenolics during fruit ripening in Eugenia astringens and E. uniflora are related to colour changes. Thus, fruit of E. astringens and E. uniflora were harvested after the expansion phase; for E. astringens, fruits were collected at the yellow, red, and black stage, while for E. uniflora fruit were obtained in stages green, orange, and red. In E. astringens fruit, no changes in the dry weight were verified along ripening, but black fruit presented higher contents of soluble sugars and soluble phenolics than yellow and red fruits. Conversely, orange and red fruits of E. uniflora showed higher dry weight than the green ones, due to dehydration. However, this multicolour display was not associated to the accumulation of soluble sugars, starch, soluble proteins, free amino acids, and soluble phenolics. |

Espécies de Myrtaceae nativas da Floresta Atlântica potiguar produzem frutos carnosos que podem apresentar variações cromáticas durante o seu amadurecimento. Considerando que ainda não se sabe se estas variações cromáticas são indicativos de maior disponibilidade de nutrientes para os dispersores de sementes, este trabalho teve como objetivo verificar se há alterações nos conteúdos de água, massa seca, amido, açúcares solúveis, proteínas solúveis, aminoácidos livres e compostos fenólicos em frutos de Eugenia astringens e Eugenia uniflora relacionadas com as mudanças de coloração durante o amadurecimento. Para tanto, frutos de E. astringens e E. uniflora foram coletados após completar a fase de expansão; para E. astringens, foram coletados os estágios amarelo, bordô e negro e, para E. uniflora, foram coletados os estágios verde, laranja e vermelho. Nos frutos de E. astringens, não houve alteração no conteúdo de massa seca ao longo do amadurecimento, mas os frutos negros apresentam maiores conteúdos de açúcares solúveis e compostos fenólicos solúveis. Em contraponto, os frutos laranjas e vermelhos de E. uniflora apresentam maior conteúdo de massa seca que os frutos verdes, devido à desidratação.
