description Since the beginning of the 20th century, when it reached about 16% of the gross domestic product, the coffee economy has maintained its importance in the country until the present day, in which Brazil is consecrated in the world's leading positions as an exporter, consumer and producer, with more than 300,000 family farms dedicated to their cultivation (BASTOS, 2021) and growth expectations that exceed 60% in revenue. When analyzed in general, the coffee manufacturing process is usually largely responsible for the damage caused to the environment, and it is in order to transform this scenario that the implementation of the building's environmental relationship is taken as a priority, through sustainable concepts and initiatives. The architectural proposal of a Coffee Roasting and Grinding Factory for the city of São Miguel/RN, aims to create opportunities for education and exchanges of experience for the community of São Miguel, creating opportunities for economic, social and educational development. Thus, the specific objectives are to understand the guiding principles of the manufacturing process, identify the applicable environmental sustainability assumptions for the mitigation of negative impacts and, finally, apply bioclimatic strategies in the manufacturing complex. Finally, with the achievement of the objectives, the challenge of thinking about an energy, environmental, social and economically responsible industry is highlighted, not only for the current community, but also for future generations.

Desde o início do século XX, quando chegou a apresentar cerca de 16% do produto interno bruto, a economia do café mantém sua importância no país até os dias atuais, em que o Brasil se consagra nas posições mundiais de destaque como exportador, consumidor e produtor, com mais de 300 mil propriedades rurais familiares dedicadas ao seu cultivo (BASTOS, 2021) e expectativas de crescimento que ultrapassam 60% de faturamento. Quando analisado de modo geral, o processo da fabricação do café costuma ser um grande responsável pelos danos causados ao meio ambiente, e é visando transformar esse cenário que é tido como prioridade a implementação da relação ambiental do edifício, por meio de conceitos e iniciativas sustentáveis. A proposta arquitetônica de uma Fábrica de Torrefação e Moagem de Café para a cidade de São Miguel/RN, visa criar oportunidades de educação e trocas de experiência para a comunidade micaelense, criando oportunidades de desenvolvimento econômico, social e educacional. Assim, têm-se como objetivos específicos compreender os princípios norteadores do processo fabril, identificar as premissas de sustentabilidade ambiental aplicáveis para a mitigação de impactos negativos e, por fim, aplicar estratégias bioclimáticas no complexo fabril.
