The study aimed to evaluate the socioeconomic profile, eating habits, and knowledge about food and sustainability of students from the Federal Institutes of Education in Rio Grande do Norte, as well as associations between certain variables of interest. This is a cross-sectional, descriptive, and quantitative study carried out with high school students enrolled in the Federal Institutes of Education, Science and Technology of Rio Grande do Norte (IFRN), whose data collection was carried out through a questionnaire allocated on the Google® Forms platform. The questionnaire consisted of 6 blocks and addressed questions regarding socioeconomic data, health data, school meals, individual and family eating habits, food during the COVID-19 pandemic and, finally, questions regarding food and sustainability. Regarding the analysis of the nutritional status of participants aged less than or equal to 19 years, the calculation of BMI/A (Body Mass Index by age) was used based on self- reported weight and height data, using the AnthroPlus software (WHO, 2009). For the analysis of associations, some hypotheses related to some variables of interest were tested, for this, the chi square test (χ2) was used. A total of 330 students answered the questionnaire, 90 men and 227 women. BMI data for both sexes showed an alarming percentage of overweight and obesity, reaching about 25% of students, however, most had a nutritional diagnosis of normal weight (68.87%). There was a significant association (p<0.05) between body dissatisfaction and the student's gender, with the highest prevalence in females. Regarding eating habits, high consumption of ultra- processed foods was observed, in addition to low consumption of fruits. During the Covid-19 pandemic, 31.8% of students reported that their diet had worsened and 2% that they were eating less. Of those who reported improved diet during the pandemic (21.9%), there was a significant association (p<0.05) with the statement that they were cooking more at home. Regarding knowledge about sustainability, 87.4% of students know the term but are unaware of questions about food origin (74.3%), organic production (54.2%), and agroecology (97%). A significant association (p<0.05) was found between knowledge about sustainable production and the origin of school meals, with the variable parents' education. It is concluded that the IFRN students participating in the study recognize the importance of school meals and consider them better than in other food environments, such as canteens. However, there was a predominance of consumption habits for ultra-processed foods and the frequency of unhealthy foods in fast foods. Topics such as environmental sustainability and its connections with food should be further explored in student education. It is suggested that further studies be carried out in order to broadly investigate the socioeconomic and environmental determinants that influence diet, especially after the pandemic period. The data from this study will be able to help nutritionists and managers of federal institutes in the development of actions related to the improvement of food quality, food, nutritional and environmental education, aiming at promoting sustainable development.

A adolescência é uma fase da vida evidenciada pela presença de importantes mudanças biopsicossociais, onde a relação do indivíduo com sua alimentação, e aspectos relacionados, pode refletir em hábitos que podem perdurar por toda a vida. O estudo objetivou avaliar o perfil socioeconômico, hábitos alimentares e conhecimento sobre alimentação e sustentabilidade de estudantes de Institutos Federais de Ensino do Rio Grande do Norte, bem como associações entre determinadas variáveis de interesse. Trata-se de um estudo transversal, descritivo e de natureza quantitativa realizado com estudantes do Ensino Médio matriculados em Institutos Federais de Educação, Ciência e Tecnologia do Rio Grande do Norte (IFRN), cuja coleta de dados se deu por meio de um questionário alocado na plataforma Google® Forms. O questionário foi composto por 6 blocos e abordou questões referentes aos dados socioeconômicos, dados de saúde, alimentação na escola, hábitos alimentares individuais e familiares, alimentação durante a pandemia de COVID-19 e por fim, questões referentes à alimentação e sustentabilidade. Com relação à análise do estado nutricional dos participantes com idade inferior ou igual a 19 anos, foi utilizado o cálculo do IMC/I (Índice de Massa Corporal por idade) com base nos dados de peso e altura autorreferidos, através do software do AnthroPlus (WHO, 2009). Foi realizada associação entre variáveis de interesse utilizando o teste de Qui-quadrado (χ2) com p<0,05 de significância estatística. Um total de 330 alunos responderam ao questionário, sendo 90 homens e 227 mulheres, onde 64,2% possuíam até 18 anos incompletos. Referente à renda familiar, 19% da amostra relatou que nenhuma dos componentes do ambiente familiar trabalhavam e 76,5% que não recebia auxílio do governo. Os dados de IMC para ambos os sexos apresentaram percentual alarmante de sobrepeso e obesidade, atingindo cerca de 25% dos estudantes, no entanto, a maioria obteve diagnóstico nutricional de eutrofia (68,87%). Constatou-se associação significativa (p<0,05) entre a insatisfação corporal e o sexo do aluno, sendo a maior prevalência em pessoas do sexo feminino. Sobre os hábitos alimentares, foi relatado pelos estudantes um alto consumo de alimentos ultraprocessados, além de baixo consumo de frutas. Durante a pandemia de Covid 19, 31,8% dos estudantes referiram que sua alimentação havia piorado e 2% que estavam comendo menos. Dos que relataram melhora da alimentação durante a pandemia (21,9%) verificou-se uma associação significativa (p<0,05) com a afirmativa de estarem cozinhando mais em casa. Sobre o conhecimento acerca da sustentabilidade, 87,4% dos estudantes conhecem o termo, porém desconhecem questões sobre origem dos alimentos (74,3%), produção orgânica (54,2%) e agroecológica (97%). Foi encontrada associação significativa entre o conhecimento sobre produção sustentável e a origem dos alimentos da alimentação escolar, com a variável escolaridade dos pais (p<0,05). Conclui-se que os estudantes do IFRN participantes do estudo reconhecem a importância da alimentação escolar e a consideram melhor que em outros ambientes alimentares, como as cantinas. Entretanto, houve predominância de hábitos de consumo para alimentos ultraprocessados e frequência em fast- foods de alimentos não saudáveis. Temas como sustentabilidade ambiental e suas conexões com alimentação devem ser mais explorados na formação do estudante. Sugere-se que mais estudos sejam realizados de modo a investigar de forma ampliada os determinantes socioeconômicos e ambientais que influenciam a alimentação, especialmente após o período pandêmico.
