Resumo:The practice of food hygiene is indispensable in all aspects of food production chains. The objective of the study was to evaluate the hygienic-sanitary conditions of Food and Nutrition Units (UAN) of state schools in Rio Grande do Norte. It is a cross-sectional, observational study, developed between August 2017 and July 2018 in 15 municipalities of the RN. The research was carried out in partnership with the collaborating center in nutrition and school feeding (CECANE) and the Federal University of Rio Grande do Norte. The sample was for convenience, being selected one school per municipality totaling 15 schools. The municipalities were those that received advice and monitoring by CECANE in the 2017/2018 work plan, so they were defined by the National Fund for Education Development (FNDE). A single visit was conducted in each of the schools, without prior notice. Data collection was performed using a checklist composed of 5 thematic blocks. They are: 1. UAN and storage; 2. Equipment and utensils; 3. Storage area; 4. Environmental sanitation, sanitation and pest control; and 5. Quality control and inventory. In the results obtained, the block that presented the greatest discrepancy from one school to another, was that of equipment and utensils, with percentages of conformity ranging from 0% to 100%. On the other hand, the fifth block that refers to quality control and inventory, had values ​​quite satisfactory, having an average of 86% adequacy. It can be concluded that school UANs presented unsatisfactory hygienic-sanitary conditions based on the criteria of the legislation, and there is a need for the implementation and monitoring of good practices in the evaluated UAN.
