Method: The bibliographic research used sites, newspapers, magazines and works of popular culture that had one of the following requirements - originator of the High West and / or environment and / or the work environment was or was in that territory. The research corpus was analyzed by the thematic analysis, which consists of a gradual reduction of the text, with subsequent coding. Results: Flour, the extensive use of milk and cream, lamb, maize foods (mungunzá, couscous, pamonha, canjica, xerém), string beans and rubacão made from it, pounded, The hen and hen are food with meaning of food, which besides satisfying the nutritional needs, are codes of social recognition, being the chicken and the pirão true cultural symbols of the region. Despite the maintenance of typical and emblematic foods of this territory, new practices and habits have been consolidated, highlighting the introduction of ultraprocessed foods with unbalanced nutritional composition. Conclusion: Foods of the Upper West, besides nourishing the body of the inhabitants of these lands, nourish the cultural identity of these people. As singular as the food of the other regions of the State, they reflect a way of being and of surviving the arid climate of the sertão, but fragile and subject to a process of homogenization of the customs, that follows for the deterioration of the food cultures and decrease of the food diversity . Objetivo: Caracterizar a alimentação do Alto Oeste Potiguar. Método: A pesquisa bibliográfica incluiu sites, jornais, revistas e obras da cultura popular que tivessem um dos seguintes requisitos:- autor de origem do Alto Oeste e/ou ambiente e/ou a ambientação da obra fosse ou se desse no referido território. O corpus de pesquisa foi analisado pela análise temática, que consiste em um redução gradual do texto, com posterior codificação. Resultados: A farinha, o amplo uso do leite e da nata, o carneiro, as comidas de milho (mungunzá, cuscuz, pamonha, canjica, xerém), o feijão de corda e o rubacão, feito a partir dele, panelada, a rapadura e a galinha caipira com pirão são alimentos com significação de comida, que além de satisfazerem as necessidades nutricionais, são códigos de reconhecimento social, sendo a galinha e o pirão verdadeiros símbolos culturais da região. Apesar das permanências das comidas emblemáticas deste território, novas práticas e hábitos têm se consolidado, como a introdução dos alimentos ultraprocessados, a inovação de técnicas de preparo e a substituição de ingredientes. Conclusão: As comidas do Alto Oeste além de nutrirem o corpo dos habitantes destas terras, alimentam a identidade cultural desse povo.
