Resumo:Beer is an alcoholic beverage obtained by the alcoholic fermentation of brewer's must originated from barley malt and water, with yeast action and addition of hops. The objective of this study was to evaluate the physical and chemical parameters of two american lager beers, one craft with pink pepper (aroeira) and one industrialized and make comparisons according to the current legislation. The analyzes were: relative density, alcohol content, total acidity, total dry extract, soluble solids, plato grade, pH, saccharometric degree, degree of fermentation, colorimetry and turbidity. The obtained results verified that both are in compliance for density, pH, saccharometric grade, color and turbidity. For total acidity, the craft one presented a value above the recommended. In terms of alcoholic content, the craft beer was in conformity with its label, but the industrialized one has obtained a great deviation for which it informs visually to the consumer. Finally, the evaluation of the degree of fermentation of a beer according to the current methodology and legislation proved to be inconclusive by these single fronts of analysis.
