Resumo:With the growing demand for more elaborated, innovative, and effective cosmetic products, great importance has been given to the creation of new release systems for active ingredients. In this context, studies of multiple emulsions appear. These are unstable systems but can release the active in a controlled manner, as in the case of Vitamin C. Although it is a very hydrophilic compound, the permeation of Vitamin C in the skin was confirmed by several researchers, and one of the proposed methods to minimize its degradation, as well as deliver it to the right place, is the encapsulation in the internal aqueous phase of the multiple W/O/W emulsion. To reach a stable formulation, using the two-stage methodology, it is necessary to change the components and their percentages and monitor them with stability tests. This work discusses in a synthetic way the state of the art of multiple emulsions encapsulating Vitamin C for cosmetic application, presenting the evolution of the scenarios, advantages, disadvantages, and systems physical-chemical properties during storage as pH, temperature, electrical conductivity, and rheological behavior. Surfactants and emulsifiers have a great influence on the emulsion rheology, due to the droplet deformation caused by the shear and stability of the system. Also, Vitamin C responds well to encapsulation both in multiple O/W/O and in W/O/W emulsions, but at low temperatures.
