The objective of this research is to analyze how the Seridó's regional confectionery in Rio Grande do Norte is constituted as part of the local culture and identity. It is a qualitative and quantitative research, exploratory and descriptive, in order to examine the specificities of the object of study. Data were obtained by literature search and on-site collection with semi-structured interviews and questionnaires. The analysis was made by graphical representations and content analysis. The results indicate that candies such as "chouriço" and "filhós", passed as inheritance to the current confectioners, refer to the memory of the interviewees, being classified as those that represent Seridó. It is concluded that the sweets of the region are considered as gastronomic cultural symbol, a memory that must be preserved and valued. A gastronomia, por muitas vezes na história, foi o motivo principal do deslocamento de pessoas. No caso do turismo, ela deixou de ser apenas um complemento para se tornar um dos atrativos. O objetivo deste trabalho é analisar como a confeitaria regional do Seridó, no Rio Grande do Norte, se constitui como parte da cultura e identidade local. É uma pesquisa quali-quantitativa, exploratório-descritiva, de forma a examinar as especificidades do objeto de estudo. Os dados foram obtidos por pesquisa bibliográfica e coleta in loco com entrevistas semiestruturadas e questionários. A análise foi feita por representações gráficas e análise dos resultados. Os resultados indicam que doces como o chouriço e filhós, passados como herança aos atuais doceiros, remetem à memória dos entrevistados, sendo classificados como os que mais representam o Seridó.
