Therefor, the work consists of a bibliographic review about the subject, process flow diagram, mass and energy balances, which demonstrated the formulation of the yogurt with whey protein and açaí jam idealized and the viability of production, besides the simplified layout of the industry plant, which aims to optimize the production process time, prevent cross-contamination, avoid waste and meet the standards of good manufacturing practices. In order to verify the economic viability, the work also presents an economic analysis that allows to define the unit cost of the product and the sale price, stipulated at R$7.26, which makes a profit of 100% and still remains bellow the average practiced in similar products found in the market. The waste generated in the process are identified and their treatment is defined, which will occur through a flotation system with dissolved air and activated sludge. Lastly, the developed product label is presented with nutritional information and all requirements made in legislation. Considerando a expansão do mercado de suplementação proteica e a constante busca por uma alimentação saudável e que traga benefícios a saúde do consumidor, o presente trabalho tem como objetivo desenvolver um iogurte, produto lácteo amplamente difundido e consumido, acrescido de whey protein concentrado e geleia de açaí, com o intuito de se apresentar como uma alternativa aos suplementos proteicos tradicionais. Para isso, o trabalho constitui-se de revisão bibliográfica sobre o assunto, fluxograma de processo e balanços de massa e de energia, que demonstraram a formulação do iogurte integral com whey protein e geleia de açaí idealizado e a viabilidade de produção, além de layout simplificado da planta da indústria, que visa otimizar o tempo de processo de produção, prevenir a contaminação cruzada, evitar desperdícios e atender às normas de boas práticas de fabricação. A fim de verificar a viabilidade econômica, o trabalho apresenta, ainda, uma análise econômica que permite definir o custo unitário do produto e o preço de venda, estipulado em R$7,26, que perfaz um lucro de 100% e ainda se mantém abaixo da média praticada em produtos similares encontrados no mercado. Os resíduos gerados no processo também são identificados e tem seu tratamento definido, o qual ocorrerá por meio de um sistema de flotação por ar dissolvido e lodo ativado.
