Resumo:Goat farming has been increasingly attracting the attention of the scientific community, as well as the small breeders in search of knowledge, of new production technologies with a view to the best use of the species' milk. Despite its social and economic importance, this activity is still extensively characterized in some regions, with low levels of technology and few derivatives available in the market. This scarcity, which may be associated with the restricted universe of consumers, is mostly limited to families living in the backlands that have milk as a subsistence product, people who are knowledgeable about their nutritional qualities and individuals with allergic or which have some gastrointestinal disorder. Aiming at the aggregation and expansion of new possibilities for the utilization of milk of this species, the present work had as objective the development of goat milk candy, presenting the process steps, the industry layout, mass and energy balances, analyzes the destination of waste generated in production. Based on the estimated data, it can be concluded that the production of sweet goat milk has economic and operational viability.
