Resumo:Objective: To analyze the adequacy of human resources in the state schools of Santa Cruz-RN, involved in school feeding. Contextualization: As regards school feeding, we can see that factors such as schooling and the quantity of food handlers can influence food security. However, in order to develop various activities in the food production process, a sufficient number of trained personnel is needed. Method: Descriptive quantitative study. The data collection took place in the period of April / May 2017, through the application of two questionnaires, both with open and closed questions. A questionnaire applied to each manipulator and another applied by school, which was answered by any of the manipulators. Results: The predominant profile of the manipulators was female gender (88%), age group between 30 and 49 years (80%), and complete secondary education (64%). Income was 1 to 2 minimum wages (72%), outsourced employment (68%), and workday 9 hours a day (68%) As for the quantitative aspects, it was observed that 62.5% of the schools are adequate. However, the schools with Full Time Teaching and PME presented inadequacies. Conclusion: It was verified the need for more studies that evaluate aspects of personnel sizing, and especially, specific indicators for the sizing of labor for school feeding and complementary programs.
