Resumo:The adulteration of our products has been mainly added to the market with a purpose of increasing the volume, thus generating more profits for the producer / trader. The valorisation is a quality of honeys marketed in the city of Santa Cruz - RN. For this, 6 samples of blood fat and chemical analysis (acidity and moisture) were analyzed (Lund, Fiehe and Lugol). Two samples of positive results for all fraud reactions and a sample of positive results for a Lund reaction, all images are related to legislation for the age, and for a most recent acidity. The fraud indicators were mainly the products marketed in inadequate packaging and without agitation, and the high concentrations may be related to the own characteristics of the honey. Thus, there is a need for other physical-nutritional analyzes for the realization of products and professionals, in addition to nutrition activities for food production.
