Sumario:Self-service restaurants are companies that are facing challenges in adapting to a new business reality that requires less food waste, control of nutritional information and efficient management. It is estimated that in rich countries there is waste close to 222 million tons of food. In Brazil, ANVISA requires restaurants to be accompanied by nutritionists to control temperature and food compliance. For restaurants to be able to both avoid food waste and work within regulatory standards, efficient management is required that can streamline internal processes for more accurate decision making. Faced with this problem, the objective of this work was to create a hardware and software platform for monitoring food exposed in a restaurant buffet aiming to improve its internal business processes and consequently minimize food waste, improve the control of nutritional information and optimize its food. management. The system is able to monitor data of the behavior of vats of a buffet in real time. Such data is shown in restaurant sectors such as cooking, nutrition and management, in real time through dashboards. The software and hardware were created using the Internet of Things (IoT), Industry 4.0 and Web Programming features. Tools such as Node-Red, Node.js, Arduino IDE, among others, made up the framework of technologies used to develop this work. As a result the project has a web system and its implementation; the prototype and the creation of tub hardware; the source code and documentation of the tool; the results of data captured by SmartBuffet running; usability and user satisfaction test results, and finally, a patent application, SmartBuffet trademark registration and a software registration.
